Spiced Pistachio Loaf

This is a super easy recipe and makes you feel all warm and toasty in a jiffy!

I first baked this cake during the lockdown and have made it a few times since. The last time I made this , was for my annual Diwali dinner and my friends absolutely loved it! My friend, S, packed the last two slices to  have along with her morning coffee 🙂

It’s a very simple recipe, just needs some roasted pistachios and cardamom powder. It’s a little healthier since it’s made with whole wheat and jaggery.

Spiced Pistachio Loaf

Ingredients

  • 3/4 cup shelled pistachios
  • 1 cup (120g) whole wheat flour
  • 1.25 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cardamom powder
  • 100g butter – room temperature
  • 3 eggs
  • 1 cup (150g) jaggery
  • 2 tsp vanilla extract
  • 1/2 cup milk

Directions

  • Grease and line a 9 inch loaf pan. Preheat the oven to 180C
  • Roast the pistachios on a dry pan for 30 seconds, tossing lightly so they don’t burn
  • Blitz the pistachios into a fine powder
  • In a small bowl, mix the pistachio powder with flour, salt, baking powder and cardamom powder
  • In a large bowl, whisk the butter and jaggery for 3-4 mins till light and fluffy
  • Best in the eggs one by one, mixing well after each addition. Mix in the vanilla extract
  • Fold in the flour mix in three parts, alternating with the milk, till just combined
  • Transfer to the baking pan and tap the pan on the counter to remove air bubbles
  • Bake at 180C for 50 mins till a tester comes out clean
  • Let it cool and then take it out of the pan to serve
