It’s summer and that means it’s time for fresh cocktails! Let me be clear, I drink cocktails all year round, but there’s something to be said for fresh, cold cocktails in the heat. Right?

I’ve been procrastinating writing up a new recipe, but a conversation with a friend today (Hi, P!) made me want to share at least one new recipe soon π
This drink is ridiculously easy to make and is absolutely yum! I made this for a party and we got through a few jugs rather rapidly!


All you need is fresh pomegranates, mint, lemon, honey, black salt, gin and tonic/soda. That’s it.


Once the juice is ready and strained, add it to your favourite gin and tonic to get the party started π

Pomegranate Gin & Tonic
Ingredients
- 2 fresh pomegranates
- 1 cup water
- 5-6 mint leaves
- 1 tbsp lemon juice
- 1 tbsp honey
- 3/4 tsp black salt
- Gin – 30-60 ml per drink
- Tonic/Soda – 60 ml per drink
- Ice
Directions
- Blitz the pomegranates with water till a clear juice forms
- Add the salt, mint, lemon juice and honey and blitz again
- Strain the juice into a jug to remove any leftover seeds
- To prep a drink, add ice cubes to a glass. Pour in 30-60 ml of gin, 60 ml of the juice and 60 ml of tonic/soda. Cheers!
