No Bake Mango Cheesecake Mousse

It’s mango season! Best time of the year 🙂 One of the only redeemable things about the summer! (Yes, I’m one of those who don’t like summer)

Mango with skin, without skin, diced, whole, in dessert, in salad, as ice cream – so many ways to devour this fruit. I personally love cold mangoes, they just taste so much better. So when I was planning a dinner for some friends recently, I knew there had to be a cold mango dessert on the menu. Not only will it taste good, it will also save me the hassle of being around a hot oven on a hot day. Win win!

I looked around for a few no bake recipes and landed on this one by Richa, which seemed super easy. I modified it a little and found myself with this glorious no bake mango cheesecake mousse! It has got to be one of the best things I’ve made!

Chilka Moong Dal (split green lentil)

For me, Dal is an integral part of comfort food. There are quite a few dishes that give me comfort and joy, but few as much as simple Dal chawal. It’s amazing how many varieties of Dal there are and how varied the recipes are across regions. So much to try, so much to learn!

This simple Moong Dal recipe (split green lentils) is fairly common in North India and is super easy to make. It’s a good break from the standard yellow dals that are part of daily fare.

Herb-y French Toast

One of the first ‘non-Indian’ breakfast dishes we ever had was French Toast. Not the sweet variety common in the US, but a savoury salt-pepper-chilli version, suitable to our palate. It was an instant hit and became a regular at home. It is easy to make, delicious, is a great way to sneak in some eggs for breakfast and is crispy yet soft at the same time. Glorious, indeed 🙂

When I started cooking for myself more often (5-6 years ago), I rediscovered my love for french toast. This version is more amped up in terms of herbs and is as glorious as ever!

Roasted Masala Channa

Savoury snacks are essential to enjoying a drink (alcoholic or not), getting through a long day, enjoying a movie/show and generally driving away hunger pangs at any time. Are you a snacky person too?

A lot of snacks that are available nowadays are the packaged, deep fried variety. While they are usually tasty, they are also massively unhealthy! I’m on a mission to find easy to make, healthier snacks for my million snacking needs!

Watermelon & Gin Cooler

Summer is here and how! Doesn’t matter which city you’re in right now, it is HOT! I just want to sit in an air conditioned room, with a book (or maybe watch Netflix) and a nice, cold drink. If that cold drink is spiked with a little boozy goodness, even better 🙂

When it comes to alcohol, nothing says summer to me more than Gin. It is refreshing, flavourful and works with so many things. A simple Gin & Tonic is my go-to, but it also works with most fruits and even of course, with cucumber and lime.

This watermelon cooler is super easy to make and a nice gin kick takes it to a whole new level 😍
