One of the easiest ways to bond with me is to talk about food – recipes, restaurants, food history, travel stories – all things food make for great conversation 🙂 Most of my friends love food and we spend tons of time trying out new restaurants, discussing recipes and cooking for each other. One of my closest friends, S, is one such forever partner. We are always sharing recipes and this grilled chicken is one such.
I first had this at a dinner he hosted and it was lip smackingly delicious. The perks of showing up early : you get to watch food being made and then get to quickly eat a few before people arrive 😀
These wings are super easy to make and they will leave you wanting more. The marinade is just simple ingredients you will have at home, nothing fancy, but they pack a punch. The spice mix is a lovely blend of indian flavours like cumin, garam masala and coriander with some heat from the pepper and the chilli, but the final taste seems very international. No one would pin this as Indian and I am certain this will be a global ‘yums in tums’ dish 🙂
I modified the original recipe a bit, by adding garlic and chilli, my go-to flavours 🙂 Marinate the chicken for at least 4 hours and up to 24 hours so that the spices get absorbed nicely into the chicken. In this case, patience really is a virtue 🙂
Cooking these is super easy – you just need an oven. Bake for 30 mins and grill for 5. Done! You get these juicy, delicious, crispy skinned pieces of joy 😍
They are so tender and tasty that you don’t even need a dip to go with them. Have them as is and you will be licking your fingers, wanting more!
Grilled Chicken Wings
Ingredients
500g chicken wings
2 tbsp olive oil
1.5 tsp freshly ground pepper
1 tsp salt
2 tsp cumin (jeera) powder
2 tsp coriander (dhania) powder
1 tsp red chilli flakes
2 tsp garlic granules/crushed garlic
1/2 tsp garam masala
1/4 tsp baking soda
1 tsp lemon juice
Directions
- Wash and pat dry the chicken
- Mix all the ingredients into the chicken and massage with your hands to ensure all the pieces are coated well
- Cover with foil and keep in the fridge for 4-24 hours
- Once ready to cook, preheat the oven to 220C and line a tray with baking paper
- Let the wings come back to room temperature. Lay out the wings on the paper with 2 inches space between each
- Bake for 30 mins, flipping them over half way through
- Take out the pan and change the oven’s setting to grill (heat from the top only) and pre heat for 5 mins
- Put the tray back in to the oven on the top rack and grill for 3-4 minutes till the skin gets crispy and the edges are a tiny bit charred
- Take the wings out, transfer to a plate and serve hot 🙂
