Cinnamon Muffins

These muffins are light and cinnamon-y, with a little crunch on the top. They are great for a little snack or as a mild dessert 🙂

The batter is a simple, regular one with the addition of some cinnamon to spice it up 🙂

And for that little extra crunch and flavour, make some cinnamon sugar and sprinkle it over the top of each muffin.

Easy!

Cinnamon Muffins

  • Servings: 12-14 muffins

Ingredients

Muffin batter

  • 2 cups (240g) all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • 2 tsp baking powder
  • 1/2 cup (60g) brown sugar
  • 1/4 cup (50g) Granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2/3 cup (105 ml) oil
  • 1 cup milk

Cinnamon sugar

  • 3 tbsp brown sugar
  • 1.5 tsp cinnamon powder

Directions

  1. Pre heat the oven to 175C and line muffin pan
  2. Mix the brown sugar and cinnamon to make the Cinnamon sugar and keep aside
  3. In a bowl, sift the flour, cinnamon powder, nutmeg powder, salt and baking powder
  4. In a larger bowl, whisk the oil and sugars for 2 mins till light and fluffy
  5. Add the eggs, one by one, mixing well after each addition. Mix in the vanilla extract
  6. Add the flour mixture to the wet batter, alternately with milk (starting and ending with flour ). Gently mix after each addition, till just combined
  7. Transfer the batter to the muffin pan, filling each mould till 1/3 level. Then sprinkle half the cinnamon sugar across all the muffins
  8. Fill up the liners with remaining batter and sprinkle the remaining cinnamon sugar on top
  9. Bake at 175C for 35-40 mins till a tester comes out clean and the muffin springs back to touch
  10. Take them out of the oven, let them cool and dig in!
