These muffins are light and cinnamon-y, with a little crunch on the top. They are great for a little snack or as a mild dessert 🙂

The batter is a simple, regular one with the addition of some cinnamon to spice it up 🙂


And for that little extra crunch and flavour, make some cinnamon sugar and sprinkle it over the top of each muffin.

Cinnamon Muffins
Ingredients
Muffin batter
- 2 cups (240g) all purpose flour
- 1/2 tsp salt
- 1/2 tsp cinnamon powder
- 1/4 tsp nutmeg powder
- 2 tsp baking powder
- 1/2 cup (60g) brown sugar
- 1/4 cup (50g) Granulated sugar
- 2 eggs
- 1 tsp vanilla extract
- 2/3 cup (105 ml) oil
- 1 cup milk
Cinnamon sugar
- 3 tbsp brown sugar
- 1.5 tsp cinnamon powder
Directions
- Pre heat the oven to 175C and line muffin pan
- Mix the brown sugar and cinnamon to make the Cinnamon sugar and keep aside
- In a bowl, sift the flour, cinnamon powder, nutmeg powder, salt and baking powder
- In a larger bowl, whisk the oil and sugars for 2 mins till light and fluffy
- Add the eggs, one by one, mixing well after each addition. Mix in the vanilla extract
- Add the flour mixture to the wet batter, alternately with milk (starting and ending with flour ). Gently mix after each addition, till just combined
- Transfer the batter to the muffin pan, filling each mould till 1/3 level. Then sprinkle half the cinnamon sugar across all the muffins
- Fill up the liners with remaining batter and sprinkle the remaining cinnamon sugar on top
- Bake at 175C for 35-40 mins till a tester comes out clean and the muffin springs back to touch
- Take them out of the oven, let them cool and dig in!
