M&M Cookies

I am a big fan of thick, chewy cookies! Crisp on the outside, soft and chewy on the inside. Yum! While chocolate chip cookies are always my go-to, I like to experiment with other ingredients as well. When someone got me M&Ms from one of their vacays, I immediately wanted to put them into a cookie. Such a fun cookie to bake as well as eat. So bright and pretty too! ๐Ÿ˜

The recipe is super simple and doesn’t need any fancy ingredients. While it does need to chill for at least 2 hours, the rest of the bake and prep time is quite short. Great cookies to prep ahead and bake as and when the craving strikes ๐Ÿ™‚The M&Ms add so much to the cookie – bright colours, pops of chocolate, slight crunch from the shells – all adding up to make an awesome cookie!Chilling the dough helps to get thicker cookies since it keeps the dough together, allowing it to spread less while bakingYou can add chocolate chips to the mix as well if you like. They will add an additional chocolatey, oozy element. But totally optional. I made half the batch with and half without.

Bake the cookies till they are just done – golden on the sides and slightly soft in the middle.

Once they cool, you’ll have the perfect texture! Happiness in each mouthful ๐Ÿ™‚

These are great for snacking on and the fact that they take just 15-18 mins to bake, makes them perfect when you’re feeling peckish or need a sugar rush. Keep some dough in the freezer :)Get your hands on some M&Ms and enjoy these candy loaded cookies โ™ฅ๏ธ

M&M Cookies

Ingredients

1.5 cups (180g) all purpose flour

1/2 tsp baking soda

1/4 tsp salt

1 egg – room temperature

1 tsp vanilla extract

100g butter – soft

1/2 cup (60g) brown sugar

1/4 cup (50g) granulated sugar

1 cup M&Ms

1/2 cup chocolate chips (optional)

Directions

  1. Cream together butter and sugars for 2-3 minutes , till light and fluffy
  2. Whisk in the egg and vanilla extract till well combined
  3. Sift the flour, salt, baking soda in a small bowl
  4. Fold the dry ingredients into the wet, till just combined
  5. Fold in the M&Ms and chocolate chips (if using)
  6. Take a medium ice cream scoop (approx 2 tbsp) and make balls from the batter
  7. Line a baking sheet and place the balls on it. Chill for at least 2 hours
  8. Once ready to bake, pre heat the oven to 180c
  9. Bake the cookies, keeping them 2 inches apart from each other on the tray, for 15-18 minutes till just done
  10. Once the edges are golden brown and the center is only a tiny bit soft, take the cookies out and let them cool on the pan for 5 minutes and then on a wire rack till they get to room temperature
  11. Serve!
