Watermelon Popsicles

Summer is here! And how! It is hot and we are all at home thanks to what’s going on in the world. Everyone is learning to deal with this new normal in different ways but food is a common pillar most people are gravitating towards. Whether it is amping up existing skills, learning new things, cooking for the first time or trying to recreate favourites – it’s all happening!

For me, the summer is all about vacations, relaxing, spending time with family/friends and of course, eating delicious food. Ice creams have been a big part of summer forever. This time, however, it wasn’t so easy to get hold of it so easily. I decided to make my own! This watermelon popsicle is super easy to make, lasts for ages and tastes delicious!

Growing up, we gorged on popsicles. Orange bar, cola bar, lemon bar – you name it. It was a treat we got on summer evenings after finishing home work and after playing in the park. I didn’t feel ready to remake those yet but got this idea to make a watermelon popsicle since the fruit is in season, is perfectly sweet and such a beautiful flavour.

Of course, I didn’t just make it using watermelons alone 🙂 This is the perfect opportunity to jazz up the fruit and add a little extra depth of flavour to your popsicle.

The watermelon is sweet and the ginger adds a slight warmth and spice to the mix. The mint adds herby flavour and the lemon just brings it all together. Magical!

I balance the flavour with a little honey and salt as well, just to round it all nicely. Make sure you blitz everything together nicely, till it’s all combined and then strain and pour into moulds. It is literally that easy.


Pop it in the freezer for 2-3 hours and then get ready to devour!

You can also add a little more oomph by adding some booze – tequila, gin or vodka will all work superbly!



You can eat them all in one go if you have enough people (or are feeling so inclined :)) or just pop them back in the freezer for whenever you’re in the mood.

Watermelon Popsicles

  • Servings: 5 large popsicles
  • Difficulty: Easy

Ingredients

650g watermelon – deseeded and cubed

2 tbsp lemon juice

15-20 mint leaves – sliced

1 inch ginger – peelee and sliced

3 tbsp honey

1/2 tsp salt

Directions

  1. Blend the watermelon till it becomes a thick juice
  2. Add the mint leaves, chopped ginger and blitz well till combined
  3. Add lemon juice, salt and honey. Blend together and adjust for sweetness
  4. Strain the juice and pour into popsicle moulds
  5. Freeze for 2-4 hours till set
  6. Gently rub on each bar to release. Enjoy!
