Watermelon & Feta Salad

I love a good salad – fresh, textural and delicious. Not to mention, usually light and healthy too. Now there are salads that make you feel like you’ve eaten nothing at all and then there are those that are a good meal by themselves without being unhealthy. Salads are so versatile and give us so much room to experiment. One such early discovery was this one : Watermelon & feta salad. This was my first exposure to fruit and cheese together in a salad. I was hooked!

This salad is super easy to put together, takes no time at all and packs a punch. It is bright and flavourful and each bite is a refreshing burst of yumminess!

Feta is one of my favourite cheeses of all time. It is crumbly, creamy and perfectly salty. If something has feta in it, there is a very high probability of me trying it πŸ™‚ I have been known to just nibble on feta as is. Yes, I’m weird!

In this salad, it adds these pockets of salty, creaminess which balance the sweetness of the watermelon and pepperiness of the mint & arugula. Perfect harmony! I always try to get as much of the feta in each bite as possible (feta junkie alert!).

I love this salad so much that I tend to order it whenever it is on the menu. Very hard to go wrong with this, I think.

The dressing is light and easy. Just the right little zing to bring the salad together. Ive made this salad for myself for easy lunches and also for friends as part of larger meals I have hosted. It’s always been a hit.

Watermelon & Feta Salad

  • Servings: 5-6 medium bowls
  • Difficulty: Easy

Ingredients

400g cold watermelon – cubed and deseeded

2 tbsp fresh mint + extra for garnish

3 tbsp fresh Arugula

2 tbsp lemon juice

2 tbsp olive oil

2 tsp pepper

3 tbsp feta cheese – crumbled

Salt to taste

Directions

  1. In a small bowl, whisk the olive oil, lemon juice, salt and pepper to create the dressing
  2. Finely chop the fresh mint and arugula
  3. Toss the watermelon, mint and arugula together in a large bowl. Pour in the dressing and mix well
  4. Crumble the feta in and mix. Check for seasoning and serve. Garnish with some fresh mint
