Chocolate & Rum Tart (No Bake)
This is a special recipe. I made this in memory of one of my closest friends, who passed away earlier this year. She was the soul of every group, the most enthusiastic partner, an avid foodie, very well read, always up for adventure, equally game for a lazy getaway and just the nicest human being. I’ve spent years with her and can’t believe she is not around anymore. One of the things she loved and which never changed, was her love for rum & Coke. Especially old monk 🙂 I made her the rum & chocolate cake for her birthday a few years ago and the weekend after she passed I just felt the need to cook something that reminded me of her. While there were manyyy options (we have eaten a lot together :)), I chose to go with this easy no bake tart, so it was no fuss, rum forward and delicious. I know she would have loved it.

Jammy Blondies
By now you all know I love a good blondie, almost as much as I love a good brownie. There are days you feel like enjoying that dense, moist, delicious dessert, minus the chocolate. Those are blondie days 🙂 They are super versatile and I just made a new version – this time with jam!
Double Chocolate & Coconut Cookies
Growing up, I was not a fan of the chocolate and coconut combo at all. Bounty was pretty much the only such option available and I just didn’t like how it tasted. So for me, the two flavours were not to be combined. Ever.
Fast forward, many years later, my preferences evolved and I was exposed to many different things that worked with chocolate and I also grew to enjoy coconut as an ingredient a lot more,in general. So when I was looking around for something different to bake last year, and I’d used coconut in cookies, cakes anyway, I decided to club it with chocolate as a cookie. Believe me, I was not prepared for how much I would like this 🙂
Spiced Cake with Mangoes & Cream Cheese
It’s the last mango dish for the year! Wrapping up this glorious season with a dessert of course 🙂 This cake is super easy to make but is very different from what you might be used to eating as a mango topped cake 🙂
