Veggie Fried Rice (with brown rice)

Growing up, I loved eating Chinese food. The family would try chinese restaurants often, we would eat chowmein in school and we would make a few chindian (chinese+indian) dishes at home as well. The home favourites were chowmein and fried rice. Those days were special ones indeed! We would come home from school and realize it was chowmein or fried rice day and be thrilled to be bits to be having something different from the standard Indian fare 🙂

This fried rice recipe is a slightly more jazzed up version of what we used to eat at home. It’s a wee bit healthier as well since it uses brown rice inside of white, but feel free to use white if you prefer. It will still be as yum!

White chocolate and cranberry cookies

Well made cookies are bliss! Thick, chewy, soft, not too sweet and full of flavour. Right? Bite sized goodness!

I recently made these amazing chocolate chip cookies which made me believe that those blissful cookies are super easy to make at home! But be warned, these are addictive and it is very hard to eat just one 🙂 Given how big a hit these were, I knew I needed to make more flavour options with a similar batter. The possibilities are endless! The first one I chose – cranberry and white chocolate! Sounds odd? It is all sorts of delicious.

Pepper Chicken

One of my go-to proteins is chicken. Super easy to cook, extremely versatile in terms of flavour and comes together pretty fast. Great for weekday dinners! I love experimenting with chicken and trying flavours from different cuisines. Not only does this give us variety for our meals, but also helps me learn and love many more styles of cooking. This recipe is adapted from some of Malayali food I’ve had over the years (aka food from Kerala or Mallu food :)). Mallu food is super delicious, peppery, punchy and downright awesome! I make it a point to try as many restaurants and recipes of this cuisine as I can. This pepper chicken is an attempt to bring some of that awesomeness into my kitchen.

Double Chocolate Mocha Muffin

Chocolate will be my all time favourite dessert flavour. Even though over the past few years I have developed a stronger love for non chocolate desserts (adulting!), nothing says comfort quite like a good old chocolate cake or muffin. What do you think? 🙂 I guarantee you will always find many chocolate desserts on the blog (eggless muffins, chocolate banana bread, fudgy brownies etc)!

Today I am adding a super simple but extremely delicious recipe to the list. Chocolate with it’s favourite companion : Coffee! And double chocolate at that. In muffin form. So easy to eat!
