Pistachio Cake (Gluten Free)

Do you know I love hosting people at home? It’s one of my favourite things to do for people I am close to. It doesn’t need to be any specific occasion, just a normal weekend or even weekday dinner (if work isn’t too crazy). I love to cook a nice meal for them and we usually end up having a super time eating, drinking, playing games and generally chattering non stop. Best way to spend a evening or even a lazy afternoon, don’t you think?

For New Year’s Eve last year (welcoming 2018), I decided it will just be much easier to call people home and avoid the usually NYE madness. I invited around 15 people and after much research and debating (with myself), decided on serving a mediterranean menu. Being the uber enthu cutlet I am, I planned an extensive menu : hummus, souvlaki, falafel, meatballs, moussaka, chicken wings and cake. It was a lot of food! I cooked for 2 whole days, but loved every minute of it! While the savoury courses were relatively easy to finalize, I struggled for a long time to come up with the dessert. I didn’t want to do traditional sweets like baklava because they are super tough and I’ve never made them before. Cakes are my strength and I figured it would be easy to go that route, given I figure out flavours that work. Much research later, I landed on pistachio as my hero ingredient for the cake. And what a cake!

Choco Chunk Blondies

Brownies are amazing desserts. Quick to make, super tasty, texturally divine and impossible to eat just one of. Agree?

Brownies, by virtue of name, are usually made with chocolate. Sometimes you aren’t in the mood for that intense chocolate-y flavour (like these brownies). It is rare, but happens. For those occasions, blondies are best! No cocoa powder in the batter, but numerous ways to amp them up by adding other things. Like chocolate chunks!

Sprout Salad

I love food. All sorts of food. Even salads 🙂 I think salads can be a meal by themselves. They are healthy (for the most part), textural, delicious and sometimes surprising. And they don’t always have just leaves and veggies.

Growing up, ‘salad’ was cucumber, tomatoes, onions sliced and put on a plate. To be had along with the meal. Health+crunch. Just like every other house. Then we started including sprouts as a salad. We used to sprout the beans at home and then mix them with salt and lemon juice. Basic but tasty. This recipe is a more jazzed up version of that initial salad, something that I have made so many times for so many people over the years.

Pepper Chicken

One of my go-to proteins is chicken. Super easy to cook, extremely versatile in terms of flavour and comes together pretty fast. Great for weekday dinners! I love experimenting with chicken and trying flavours from different cuisines. Not only does this give us variety for our meals, but also helps me learn and love many more styles of cooking. This recipe is adapted from some of Malayali food I’ve had over the years (aka food from Kerala or Mallu food :)). Mallu food is super delicious, peppery, punchy and downright awesome! I make it a point to try as many restaurants and recipes of this cuisine as I can. This pepper chicken is an attempt to bring some of that awesomeness into my kitchen.

Double Chocolate Mocha Muffin

Chocolate will be my all time favourite dessert flavour. Even though over the past few years I have developed a stronger love for non chocolate desserts (adulting!), nothing says comfort quite like a good old chocolate cake or muffin. What do you think? 🙂 I guarantee you will always find many chocolate desserts on the blog (eggless muffins, chocolate banana bread, fudgy brownies etc)!

Today I am adding a super simple but extremely delicious recipe to the list. Chocolate with it’s favourite companion : Coffee! And double chocolate at that. In muffin form. So easy to eat!
