Chewy Chocolate Chip Cookies

Chocolate chip cookies have been my go-to for as long as I can remember. Growing up, we used to get only plain, vanilla biscuits for the longest time. But once the market opened up and people’s preferences became more varied, we started seeing a lot more ‘fancy’ cookies in the market. One of the first new types was the chocolate chip. It started off as the thinner, crisper variety (the recipe of which shall be up soon), but then also added on the thicker, chewier version. My aunts used to get the chewy chocolate chip cookies from the US as well – those were these super luxury goodies for us back in the day. And so delicious!

On my recent trip to New York, I tried a ton of cookies. Like really a ton. My favourite were from this bakery called Levain. BEST COOKIES EVER! Massive, thick, dense, chewy and full of chocolate in every bite. Heaven!

While these aren’t at that level yet (I promise to try to replicate those), these are pretty much bang on in terms of thick, chewy cookies. I ate way too many in the process of testing, all worth it, I say 😀

Whole wheat and jaggery spiced cake

After baking a ton of the regular all purpose flour desserts, I felt like I should bake something a little healthier. That led me to think of flavours that work together while keeping the cake minimally sweet, yet moist. It was raining and I was sipping on masala chai while figuring this question out. Absolute movie feels no?

The best tea for rainy days is Masala Chai. Not too sweet, perfectly spiced and just so comforting.  That gave me an idea. What if I marry these two ideas – a healthier dessert and chai flavours? Whole wheat + masala chai spices + jaggery. Should work right? It does! So well! 🙂 *Happy Dance*

Lemon Loaf

Do you love lemon in desserts? Please say you do 🙂 Lemon, to me, is one of the best flavours for a dessert. It is the perfect ingredient to add that delicious balance to a dessert so it tastes sweet but tangy, rich but fruity all at the same time. Like magic 🙂

After years of just eating lemon tarts, I discovered lemon loaves. Who knew it was so simple to bake with lemon? This lemon loaf is something I bake a lot and it is always a massive crowd favourite! Always.

Basic Marble Cake

I started baking when I was very young. Around the age of 4. I used to help my grandmoms by just mixing the final batter at the time and ate most of it while doing so 🙂 Over time, I moved on to doing more of the work, under their supervision and saw them make different kinds of cakes in the process. Best weekend or vacation activity, I say!

For the longest time we just had basic vanilla and basic chocolate cakes. With the occasional rainbow cake for fun. Once while we were out for a meal, I saw marble cake on offer. I was amazed at this magical way that both vanilla and chocolate were part of the same cake! As far as I knew, adding chocolate to a vanilla cake made the whole thing chocolate. What was this awesomeness?

This was around the time boxed cake mixes were my go-to (yes, I had that phase) and I found this marble cake at the store. Got home, tried it and was super thrilled! From them on, this has been one of my favourites to make. Obviously, it is now made from scratch. No box mixes anymore! This is such a throwback to discovering new kinds of cake and figuring out how to make them minus my friend Google 🙂
