Lemon Blueberry Muffins

One of my favourite fruit dessert flavours is lemon. For the longest time, the only lemon dessert I had tried was a lemon tart and a good lemon tart is one of the best things ever! The idea of this tangy flavour with the right amount of sugar is just so exciting!

When I started baking more regularly a few years ago, I discovered lemon cake. And what a delicious discovery that was! Moist, tangy, light and just divine. Because I loved the lemon cake so much, I began reading up on other flavours that work well with lemon and a lot of recipes talked about blueberry. Now we don’t get blueberry very easily here. The fresh ones are hardly there for a few weeks and even then are fairly expensive. The dried ones are found more regularly and are not as expensive. I figured I should at least try the flavour combination out. Turns out – SUPER idea! 🙂

Cinnamon Swirl Cake

One of the strongest associations I have with baking is the aroma that comes from freshly baked food. Whether it is chocolate, vanilla, banana or even chicken. It doesn’t always need to be sweet 🙂 But one of my favourite baked food aromas has got to be cinnamon! By itself, like in this delicious cinnamon cake, or along with other flavours, the aroma of cinnamon wafting through the house is enough to make me hungry.

Peanut Butter Cookies

For me, cookies are synonymous with quick bites of goodness. They are crunchy yet chewy, have bursts of flavour and leave you feeling content with just a few bites. One good cookie can really change your mood and bring a smile to your face.

To top it off, they are fairly easy to make and have such a variety of flavours that the options seem endless. One of my favourite flavours, in life, is peanut butter. This lends itself extremely well to cookies. Extra buttery (regular + peanut butter!), a mix of salty and sweet, crunchy on the outside and melt-in-the-mouth overall. YUM.

Vanilla Sponge with Mangoes and Cream

Nothing says summer better than Mangoes! Especially in India. Especially in Mumbai.

There are so many delicious varieties of mangoes in India – Banganapalli, Langda, Dashehri, Kesar and so on. But my favourite has got to be the Alphonso! It is so sweet and full of flavour! Mangoes make the horrid summer heat a teeny bit more bearable. I dread summers. I am definitely a winter and monsoon person. The heat and humidity are just not my scene. Give me an air-conditioned room, coconut water and some tasty mangoes and I might feel a bit better about this time of year.

Mangoes are extremely versatile. Eat them as is, add them to milk to make thick shakes, puree them and eat them with puris, add them to a nice leafy salad, enjoy the chunks of mango in mango ice cream… the possibilities are endless. My favourites are the milkshake and the ice cream. And the plain fruit as is, of course. I took this love of mangoes and milk/cream and converted it into a cake!
