Hello, fellow cookie fans! I’ve been baking variations of chocolate chip cookies for the most part, but suddenly felt like I needed a change. I need a little chocolate double dose. A beautiful balance of thick, chewy cookie with oodles of chocolate and some crunchy bits 🙂

I love a good ol’ chocolate chip cookie, but it’s always fun to try new takes on the classic (like the peanut butter combo of the espresso burst). I was browsing through some recipes online and found one which used olive oil instead of butter and it sounded super! I had to try a version 🙂
I am a big fan of thick, chewy cookies! Crisp on the outside, soft and chewy on the inside. Yum! While chocolate chip cookies are always my go-to, I like to experiment with other ingredients as well. When someone got me M&Ms from one of their vacays, I immediately wanted to put them into a cookie. Such a fun cookie to bake as well as eat. So bright and pretty too! 😍
There are days when you just want some quick chocolate therapy, right? Either for a mood lift or some energy or just because you’re in the mood for some chocolate 🙂 There is always a good reason! Your usual cake recipes take an hour or so, cookies need some dough chilling, brownies need melted chocolate to cool down etc so a quick fix isn’t always easy. Well, that’s about to change 🙂

I’ve always been a fan of Nutella (I mean, who isn’t?) but as I’ve grown older I find it too sweet to have it the way I used to. Earlier I didn’t even need bread, just a spoon and a jar of Nutella were fine 🙂 As my palate has evolved , I’ve grown to appreciate things that are less achingly sweet and more a balance of sweet and salty. Nutella and sea salt is one such magic combination! I’ve had this in cookies and tarts and I was ecstatic!
These cookies are my take on this gorgeous combo. Nutella inside, Nutella on top, crunchy sea salt sprinkled generously all over and that buttery cookie. YUM YUM YUM! 😍😍
